Salmon Bites w/ Garlic Zucchini & Spiced Cauliflower Rice
INGREDIENTS:
For the Salmon:
- 1 lb salmon fillet, cut into bite-sized cubes
- 1 tbsp olive oil or butter
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt & black pepper to taste
For the Zucchini:

1 zucchini, sliced

1 tbsp olive oil

1 clove garlic, minced

Salt & black pepper to taste
For the Cauliflower Rice:

2 cups cauliflower rice

1 tbsp olive oil
-
½ tsp cumin
-
½ tsp smoked paprika
-
¼ tsp crushed red pepper (optional)

¼ cup diced bell peppers (red, green, or yellow)

Salt to taste
INSTRUCTIONS:
1. Crisp up the salmon – Heat olive oil in a pan over medium-high heat. Toss the salmon cubes with garlic powder, smoked paprika, salt, and pepper. Sear for 2-3 minutes per side until crispy on the outside but tender inside.
2. Sauté the zucchini – In another pan, heat olive oil and sauté garlic until fragrant. Throw in the zucchini, season with salt and pepper, and cook for 3-5 minutes until slightly caramelized but still crisp.
3. Flavor the cauliflower rice – Heat oil in a pan, add bell peppers, and cook for 2 minutes. Stir in cauliflower rice, cumin, smoked paprika, crushed red pepper, and salt. Cook for another 3-5 minutes until heated through and slightly crispy.
4. Plate it up - Stack the crispy salmon bites over the zucchini and serve alongside that spicy, smoky cauliflower rice.
