Lemon Garlic Butter Mahi Mahi

INGREDIENTS:
- 1 medium lemon
- 4 (4 to 6-ounce) mahi mahi fillets
- 1 1/4 teaspoons kosher salt
- Freshly ground black pepper
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 4 tablespoons cold unsalted butter
- 1 tablespoon coarsely chopped fresh parsley leaves

INSTRUCTIONS:
1. Prep the lemon by slicing and juicing. Set aside.
2. Pat the mahi mahi dry, then season with salt and pepper.
3. Pan-sear the fillets until nicely browned.
4. Reduce heat, introducing lemon juice and minced garlic.
5. Gradually add lemon slices and butter to the pan.
6. Season the sauce, stirring in the fresh parsley.
