Shrimp Cocktail (Coctel de Camarones)
INGREDIENTS:
- 1 lb large shrimp, cooked (peeled and deveined)
- 1 cup Clamato juice
- 1/2 cup ketchup
- 1/4 cup lime juice (freshly squeezed)
- 1/4 cup cilantro, finely chopped
- 1/2 cup tomatoes, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup cucumber, diced
- 1 jalapeño, finely chopped (optional, for heat)
- Hot sauce (optional, for heat)
- Salt and pepper to taste
- Avocado slices for garnish
- Saltine crackers or tostadas for serving

Prepare the Shrimp:
- Start with cooked shrimp. If you're cooking the shrimp from scratch, boil in salted water for 2-3 minutes until pink and opaque. Drain and let cool.

Mix the Cocktail Base:
- In a large bowl, combine Clamato juice, ketchup, lime juice, and cilantro. Stir well.

Add the Veggies:
- Stir in the diced tomatoes, red onion, cucumber, and jalapeño (if using). Add a pinch of salt and pepper to taste.

Incorporate the Shrimp:
- Gently fold in the cooked shrimp, ensuring they are fully coated in the mixture.

- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
