Shrimp Cocktail (Coctel de Camarones)

INGREDIENTS:

  • 1 lb large shrimp, cooked (peeled and deveined)
  • 1 cup Clamato juice
  • 1/2 cup ketchup
  • 1/4 cup lime juice (freshly squeezed)
  • 1/4 cup cilantro, finely chopped
  • 1/2 cup tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cucumber, diced
  • 1 jalapeño, finely chopped (optional, for heat)
  • Hot sauce (optional, for heat)
  • Salt and pepper to taste
  • Avocado slices for garnish
  • Saltine crackers or tostadas for serving

 

INSTRUCTIONS:

  1. Prepare the Shrimp:

    • Start with cooked shrimp. If you're cooking the shrimp from scratch, boil in salted water for 2-3 minutes until pink and opaque. Drain and let cool.
  2. Mix the Cocktail Base:

    • In a large bowl, combine Clamato juice, ketchup, lime juice, and cilantro. Stir well.
  3. Add the Veggies:

    • Stir in the diced tomatoes, red onion, cucumber, and jalapeño (if using). Add a pinch of salt and pepper to taste.
  4. Incorporate the Shrimp:

    • Gently fold in the cooked shrimp, ensuring they are fully coated in the mixture.
  5. Chill:

    • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve:

    • Serve the shrimp cocktail in chilled glasses or bowls. Garnish with avocado slices and a side of saltine crackers or crispy tostadas.
